2007 HARVEST
The 2007 growing season was another cool and dry growing season on California’s Central Coast. Flowering was slightly on the early side, which would indicate a lighter crop level. The summer alternated between cool and cold temperatures resulting in clusters smaller than usual across all varieties and crop levels slightly lower than previous years. Concentration of flavors and color was very good however.
VITICULTURE
100% of the grapes for our 2007 Pinot Grigio came from vineyards in the cool-climate Central Coast American Viticultural Area (AVA), with 79% from Monterey County, 13% from Santa Barbara County, 6% from San Benito County and 2% from San Luis Obispo County. Producing our Pinot Grigio exclusively from cool-climate grapes enables us to produce a wine with ripe fruit flavors balanced by crisp acidity.
WINEMAKING
After harvesting, we immediately whole-cluster-pressed the grapes to preserve the purity of the juice, which was cold-fermented for several weeks in stainless steel tanks to fully capture Pinot Grigio’s bright fruit expression. We then aged the wine sur lie (on the yeast lees) in tank with weekly stirrings to integrate its flavors and enhance its silky texture. To retain the wine’s fresh, crisp character, it did not undergo malolactic fermentation or oak aging. To further enhance its fragrant aromas, we blended in small amounts of Sauvignon Blanc, Gewürztraminer, White Riesling and Semillon.
